About Pu Erh Tea

Pu Erh takes its name from Pu'er, the old tea-trading town in Yunnan, south-west China. It is a dark tea: once the leaf is made, it is left to ferment, and that is where its earthy depth comes from.

The leaf: Camellia sinensis var. assamica

Large-leaf tea — Pu Erh is made from the broad-leaved Yunnan variety of the tea plant.
Raw and ripe — raw Pu Erh ferments slowly over years. Ripe Pu Erh is fermented in weeks, a method first used in Kunming in 1973.

The spices

Cinnamon — warmth and a natural sweetness.
Clove — a deep, aromatic spice.
Cardamom — a fragrant, lifting note.

Fruit and nuts

Orange peel — fresh citrus zest.
Apple — a ripe, fruity softness.
Hazelnut — a mellow, buttery richness.
Walnut — a gentle, lasting depth.
